It’s definitely possible to take a new job every couple of years, depending on where you live. But how different can they be from one another? Just moving companies and doing the same kind of job doesn’t fundamentally relieve intellectual boredom, so you need to jump careers, or at least do mini-jumps inside of a broad career — and that, as you say, is probably not possible indefinitely.
